The sandwich counter was already there when this place was a shop. When Alcide sold a bit of everything, the bread was filled with whatever was good: cold cuts, cheese, preserves.
Not much has changed today. Times have changed, but not the idea of using real, carefully selected ingredients and serving them with simplicity.
